Grilled chicken focaccia sandwich 

I just made these tonight and Kev said I HAD to post it.

1 chicken breast per person
marinade: juice of 1 lemon, 1 minced garlic clove, salt, pepper, dried thyme, spicy brown mustard
focaccia bread (I used spinage and cheese foccia)
sliced onions
sliced mushrooms
shredded italian blend cheese
salt and pepper
olive oil

Mix the marinade ingredients together and marinate the chicken for 20 minutes up to a few hours.

Saute' mushrooms and onions in olive oil. cook chicken on grill. Cut focaccia bread in half across, and then divide into sandwich-sized sections (I got 3 out of mine). Spread both halves with a thin layer of mayo.

Slice the grilled chicken into pieces and place on one half of the bread. Top with cheese and saute'ed onions and mushrooms. Top with other piece of bread...cut sandwich in half...and mmmmmm...enjoy!
